Paleo, vegan, dairy, egg and nut free options ~ all soy, gluten, wheat and refined sugar free
Ingredients:
- 3 ripe bananas
- 1/3 cup melted coconut oil (Paleo, vegan and dairy free), butter or ghee (clarified butter – lactose and casein free)
- 4 eggs or 4 tablespoons chia seeds soaked for at least 10 mins in ½ cup water (vegan and egg free)
- 3 tablespoons honey or maple syrup (vegan)
- 1 teaspoon vanilla extract
- ½ cup coconut flour
- 60g vanilla flavoured protein powder
- 1 teaspoon baking powder
- 1/3 cup chopped mixed nuts (seeds if nut free)
- 1 cup fresh, sliced berries of your choice
Method:
- Preheat oven to 180˚C fan-bake
- Line a loaf tin with baking paper, or alternatively grease with coconut oil or butter/ghee
- In a food processor combine bananas, oil/butter, eggs/chia, honey/maple syrup and vanilla. Mix until smooth and transfer to a large bowl
- Add coconut flour, protein powder, baking powder, nuts/seeds and berries to the bowl. Mix with a wooden spoon until combined
- Transfer to loaf tin
- Bake for 30-40 minutes or until golden brown
- Serve warm with butter, coconut butter or nut/seed butter, if desired
- Store in an airtight container in a cool, dark place
