You can have your pancakes and eat them too!
Paleo, plus dairy, soy, gluten, wheat and refined sugar free (if you don’t sprinkle icing sugar on top!)
Ingredients (serves 2):
- 2 scoops vanilla protein powder (collagen powder can also be added)
- 2 ripe, mashed bananas
- 2 eggs
- 1/4 teaspoon cinnamon
- Coconut oil or butter for cooking
Method:
- Mix together protein powder, bananas, eggs and cinnamon in a bowl
- Heat a bit of coconut oil or butter in a pan and cook each pancake until golden brown on each side
- Serve with fresh strawberries, blueberries, cherries, coconut yoghurt, maple syrup, and a sneaky sprinkle of icing sugar if desired
