Smashed Avo on Toast

You don’t need to go to a cafe to enjoy this genius creation – but this was delicious and much prettier to photograph than my homemade version!

Gluten, wheat, soy and refined sugar free (depending on bread)

Serves 4

Ingredients:

  • 1 avocado
  • Feta
  • Juice from 1 lime or 1/2 a lemon
  • Optional: a bit of parsley or rocket

 

  • With toast (I use Paleo bread or gluten free sourdough)
  • And eggs (cooked to your liking)
  • Plus hot smoked salmon or bacon if you’re feeling hungry

Method:

  1. Scoop out avo flesh and mash in a bowl
  2. Crumble in some feta, add more to taste
  3. Add lime/lemon juice and greenery (parsley or rocket) if desired.  Mix until combined
  4. Cook your toast and eggs
  5. Serve Smashed Avo on toast (I use butter on my toast under the avo) with eggs on top
