Lest we forget
Vegan and free of wheat, dairy, egg, soy and refined sugar ~ gluten free, nut free and Paleo options
Makes 16 biscuits
Ingredients:
- 100g rolled oats (or Bob’s Red Mill Wheat Free Rolled Oats*)
- 50g coconut flour
- 50g desiccated coconut
- 25g coconut sugar (or brown sugar)
- 50g melted coconut oil
- 1/4 cup pure maple syrup (not maple flavoured syrup)
- 1/2 teaspoon baking soda
- 1 tablespoon hot water
*If you are allergic to wheat because wheat-free oats are not processed on the same machinery as other gluten-containing grains. Substitute with ground nuts of your choice (e.g. almonds) for a Paleo version.
Method:
- Preheat oven to 160 degrees fan-bake
- Line a baking tray with baking paper
- In a large bowl combine the dry ingredients (except baking soda)
- Add the wet ingredients (except hot water)
- Stir in baking soda dissolved in hot water
- Mix until combined
- Roll into 16 balls and flatten with the back of a fork
- Bake for 10-12 minutes or until golden brown
- Enjoy with a cup of tea
