This delicious and fresh salad makes me wonder how I used to dislike kale!
Paleo, Vegan, plus dairy, egg, soy, gluten, wheat and refined sugar free
Ingredients:
- Kale – pull leaves off stems
- Beetroot grated
- Avocado sliced
- Mandarins segmented
- Pinenuts
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Pinch of Celtic or Himalayan salt
Method:
- Put kale in a bowl and massage with olive oil and lemon juice, until kale is tender
- Add the rest of the ingredients and toss if desired
- Serve as a side salad to accompany a nutritious protein
