Friday night is pizza night! 100% guilt-free healthy pizza!
Paleo, gluten, wheat and soy free, optional refined sugar free
Serves 2
Ingredients:
- Keto and/or Paleo (or just gluten-free) pizza base
- Tomato paste
- Thinly sliced zucchini (I use a peeler)
- Pre-cooked chicken breast (pan-fried in olive oil, salt, turmeric and cayenne pepper)
- Sliced tomato
- Grated cheese
- A sneaky drizzle of BBQ sauce
- Optional: baby spinach on top is nutritious and delicious addition
Method:
- Dice chicken breast and marinate in spices. Pan-fry in olive oil until browned (but not cooked right through otherwise it will overcook on the pizza)
- Spread pizza base with tomato paste
- Layer on thinly sliced zucchini evenly over the base
- Add chicken, tomato, cheese, BBQ sauce, and baby spinach if desired
- Cook as per pizza base packet instructions
