Or Dinner Bowl, whatever you like!
Gluten, wheat, nut and refined sugar free, vegan, egg and dairy free without the mayo
Serves 2
Ingredients:
- 1 cup raw brown rice (or use pre-cooked)
- 1 packet tempeh
- 1 avocado
- 2 tomatoes
- Pieces of cos lettuce
- Tamari (gluten free soy sauce)
- Miso paste (optional)
- Olive oil for cooking
- Sneaky dollop of mayo (I’m with you – a match made in heaven with brown rice)
Method:
- Cook brown rice using packet instructions
- Prep diced avocado and tomatoes
- Slice tempeh and marinate in a few drops of tamari and 1/2 teaspoon miso paste (if desired). Pan-fry in a drizzle of olive oil (add more if needed as tempeh absorbs a lot of liquid). Cook for about 5 minutes or until golden brown.
- Serve in a bowl. Brown rice on the bottom, cos lettuce on the side, and tempeh, avocado and tomato on top, and a dollop of mayo to top it off (if you’re with me!).
